Spicy Strawberry Shrimp Cocktail

Strawberry Glaze:
3 cups strawberry juice
4 cilantro sprigs
1 lg. Jalapeno sliced
1/2 lime juiced
2 tbs sugar
1 tbs red wine vinegar

In a saucepan bring ingredients to a boil. Then simmer over low heat, stirring occasionally. Cook until glaze is thickened (about one hour). Set aside and allow to cool in refrigerator.

Shrimp Boil:
6 cups water
2 cups white wine
2 cloves garlic, minced
1 lemon sliced
1 tbs salt
1 pound medium shrimp

In large saucepan, boil water, wine, garlic, lemon and salt. With an ice bath near by, boil shrimp til done and place in ice bath immediately. Slice shrimp lengthwise. Strain shrimp and set aside.

Strawberry Salsa:
1 pound strawberries, sliced
1/2 small red onion, thinly sliced
1/2 cup loosely packed cilantro leaves

In medium size bowl, combine the strawberries, red onion, cilantro and shrimp. Add strawberry glaze to shrimp mixture. Toss gently to combine. Season with salt to taste.
