Tommy O'Brien's Strawberry Blue Salad

Fresh mixed greens
Fresh strawberries, sliced  (when available try the Florida Sweet strawberries-Berry Fine and Dover Classics)
Peeled cucumbers, sliced
Crumbled Maytag blue cheese
Candied walnuts
Button mushrooms, sliced
Roma vinaigrette
Balsamic reduction

Toss the mixed greens and the strawberries lightly in the Roma vinaigreete.  On the plate, place the greens and strawberries;  top with mushrooms, cucumbers and crumbles of Maytag blue cheese.  Lightly drizzle the balsamic reduction over the salad.  Finish with the candied walnuts.

For balsamic reduction, place vinegar in a small saucepan and simmer over medium-low heat until reduced by half.
